How This Happened
One Bottle Left in Leith
March 2026, the Independent Spirits Festival in Leith. Little Brown Dog had poured a French brandy they had bottled from a cask matured in Scotland, and by the time I got to the table there was one bottle left. I bought it for my father and said the thing you say without expecting anything: if you ever get access to more of that, let me know.
They did. I bought the cask without hesitation. It is bottled on October 5, 2026 and lands in America the same month. Whispering Waters has only ever bottled Scotch. This is the first time the mermaid goes on anything else, and it took a 33 year old cask to earn it.
Here is the strange part. This spirit was distilled in the Cognac region of France in 1993, filled into a European oak cask, and then shipped to Scotland to mature. Not finished there. Matured there, for thirty-three years, in a Speyside warehouse, next to whisky.
Why would anyone do that? We honestly do not know. Does it matter? A little. Because it did not mature in France, it cannot carry the name of the region it came from. So the label says exactly what the law allows and exactly what it is: Vintage French Brandy, 1993, Product of France. The spirit does not care what it is called.
What 33 years in Speyside does to French brandy
- Cognac warehouses are warm and dry. Speyside is cool and damp. Maturation runs slower, the angels take less, and the spirit keeps its strength: 48.8% after 33 years is a number a French cellar would rarely give you.
- A single European oak cask for the entire life of the spirit. No re-racking, no finishing, no blending across casks.
- The result is a brandy with the age of a very old Cognac and the temperament of an old Speyside whisky: deep, slow, and nothing sharp left in it.
What to expect in the glass
Rich, dried-fruit territory. Think fig, date, raisin and old orange peel, the kind of depth that only comes from three decades in wood, with the oak rounded off rather than drying.
At 48.8% it is bottled exactly as it left the cask. Natural colour, non-chill filtered, every bottle hand numbered.
