This is where The Whiskey Lab began. For our inaugural release we chose a whisky that refuses to sit in one category, a single grain Scotch with enough richness and texture to win over bourbon drinkers and enough finesse to satisfy committed Scotch fans. After 27 years in ex-bourbon oak, it lands somewhere all its own.

There is family in this bottle too. Girvan is owned by William Grant & Sons, the family distiller behind Glenfiddich and Balvenie and the house that produces the Clan MacGregor blend, the clan our co-founder Jay claims through his maternal grandfather. Choosing Girvan for our first release was equal parts taste and heritage.

Girvan is one of Scotland's great grain distilleries, built for scale and consistency. Its light, clean spirit is the perfect canvas for long ex-bourbon maturation, and at 27 years the cask has given it a deep, buttery, tropical complexity without ever turning heavy or over-oaked.

Distillery profile, Girvan

  • Built in 1963 in South Ayrshire by William Grant & Sons, reportedly from ground-break to spirit in just nine months, under the direction of Charles Grant Gordon.
  • One of the largest grain distilleries in Scotland, Girvan produces the light, clean single grain that forms the backbone of the Grant's and Clan MacGregor blends.
  • A Lowland grain distillery, prized for the smooth, sweet, versatile spirit that long ex-bourbon maturation rewards so well.
  • Single cask Girvan at 27 years is uncommon; most of its output goes to blending, which makes an independent bottling of this age a real find.

Cask profile, Single Ex-Bourbon Cask, 27 Years

Full-term maturation in a single ex-bourbon cask, reference 700095. American oak and nothing else, the most transparent way to show what 27 years does to a fine grain spirit.

Long bourbon-cask aging builds buttery richness, vanilla, coconut, and tropical fruit, with an oily, almost funky depth that bourbon lovers and Scotch drinkers both gravitate toward. The result is luxurious and a little wild, exactly the kind of crossover dram we wanted to open with.

Bottled at cask strength, 52.6%, just as the cask delivered it.

Tasting notes
Nose
Opens with rich brown butter and a touch of cinnamon. With a few drops of water it evolves into brown butter cornbread and coconut oil, with a subtle undercurrent of vanilla.
Palate
Velvety and complex, with an acidic, oily texture. Overripe bananas, candied bacon, and a tropical hint of pineapple create a rich and engaging experience.
Finish
Long and indulgent, marked by buttery richness and a delightful fruity funk, leaving a lasting impression of both luxury and depth.
