WHISPERING WATERS NORTH BRITISH 35 YEAR OLD SINGLE GRAIN

THIRTY-FIVE YEARS IN A SINGLE HOGSHEAD
Region Lowland Distillery North British Style Single Grain Age 35 years ABV 46% Maturation Cask Ex-Bourbon Hogshead Outturn 276 bottles

North British is not a malt. It is single grain Scotch, distilled in continuous Coffey stills in the Gorgie district of Edinburgh, and for most of its life it has been the invisible backbone of blended whisky rather than a bottle anyone seeks out by name. Drinkers rarely meet it on its own. At 35 years old, it more than earns the spotlight.

Founded in 1885 by a group of independent blenders who wanted their own reliable source of grain spirit, North British has always made a lighter, sweeter style built for consistency. Column distillation produces a clean, refined spirit, and careful grain selection gives it a smooth, versatile character that is equal parts sweet and robust. Young, it is a blender's tool. Given decades, it becomes something else entirely.

The story of this bottle is time. Thirty-five years in a single ex-bourbon hogshead means an enormous angel's share, the slow evaporation that concentrates and softens what remains and gives the spirit room to breathe. That long, patient oxygenation is what no combination of wood and youth can fake. What is left is exceptionally smooth, elegant, and layered with a nuanced fruitiness only decades can produce.

Distilled September 1989. Bottled October 2024. Single cask. 46% ABV, the natural strength this spirit settled to over 35 years. Non-chill filtered. Natural color. 276 bottles.

Distillery profile, North British

  • Founded in 1885 in Edinburgh's Gorgie district by a consortium of blenders, including Andrew Usher and William Sanderson, who wanted an independent supply of quality grain whisky.
  • One of Scotland's largest grain distilleries, it runs Coffey (continuous column) stills and supplies grain spirit to many of the industry's best-known blends.
  • Today it is operated by Lothian Distillers, a 50/50 joint venture between Diageo and The Edrington Group.
  • Single grain bottlings at this age are rare; most North British is blended away young, which makes a 35-year-old single cask a genuine collector's piece.

Cask profile, Single Ex-Bourbon Hogshead, 35 Years

A single ex-bourbon hogshead, the most honest cask you can give a grain spirit. No sherry, no finish, nothing to hide behind. Just American oak and time.

Over 35 years the angel's share takes a heavy toll, and that is the point. The slow loss concentrates the remaining spirit and exposes it to decades of gentle oxygenation, building tropical fruit, soft spice, and a polished, almost effervescent texture. Light grain whisky needs exactly this kind of patience to reach its peak.

Bottled at its natural strength, exactly as the cask delivered it.

Tasting notes
Nose
Bright, zingy fruit with a touch of grass, summer blossom, and a little green apple. Elegant from the first sniff.
Palate
Pineapple upside-down cake and lemon sorbet burst out first, before gentle spices of nutmeg and cinnamon emerge.
Finish
The fruit tingles on the palate like popping candy, almost effervescent. As it fades, tropical fruit juice and lemon sherbet remain.
