When Aged Whisky Meets Exotic Wood

John Ferguson and Alex Harrison founded Ferg & Harris in 2021 through Young Spirits, their Edinburgh-based spirits business. The premise is simple: find exceptional single malt Scotch that's already outstanding on its own, then finish it in carefully chosen wood to see what happens next. Pedro Ximenez sherry, Sauternes, white port, virgin oak, Calvados, Brunello di Montalcino. They treat cask finishing as controlled alchemy.

With around 500 casks in their storeroom, the selection process is deliberate. Most casks never make the cut. The ones that do are bottled at natural cask strength, no chill filtration, no added color. Their IWSC gold-awarded 12-year Speyside became the calling card. Everything since has pushed the same idea further: start with top-drawer spirit, match it with premium wood, and let time do the rest.
