THE BRAEVAL SHERRY DUO, TWO BRAEVALS DISTILLED 14 DAYS APART
This is the cleanest sherry experiment we have ever had on the shelf. Two casks filled at Scotland's highest distillery fourteen days apart in October 2014, both spent their entire lives in first fill sherry wood, both bottled at cask strength. The only thing that differs is which sherry was in the cask first. Pedro Ximénez in one. Oloroso in the other.
The sweet side and the dry side of sherry, from the same spirit, side by side. We can make six sets, and the set is 10% cheaper than buying the two bottles on their own.
Bottle one: Whispering Waters Braeval 9 Year, 1st Fill PX
- Distilled October 28, 2014, bottled October 14, 2024: 9.97 years, fourteen days short of ten, so the label must say 9.
- Full maturation in a first fill Pedro Ximénez cask. 60.2% cask strength, 306 bottles.
- The sweet side: dark jammy fruits, cherry chocolate, stewed blackberries and honeyed dates. PX at full volume.
Bottle two: Uncharted "Higher Ground" Braeval 10 Year, 1st Fill Oloroso
- Distilled October 14, 2014, bottled April 2025 at 10 years old. Cask UC048.
- Full maturation in first fill Oloroso barriques. 55.0% cask strength, 612 bottles, 60 in the USA.
- The dry side: butterscotch, sticky toffee pudding, cinnamon pastry and a spice cupboard finish. Oloroso at full volume.
Why a set
Same distillery, same water, same stills, same month, same length of time in first fill sherry. Everything is held constant except the sherry. Pour them together and you will never need anyone to explain the difference between PX and Oloroso again.
One set contains one 700ml bottle of each release.
