A Distillery That Existed Long Enough to Make 39 Casks

Chain Pier was built in 2019 on Edinburgh's historic Leith waterfront, the first whisky production inside the Edinburgh city limits in over 100 years. It was always meant to be an experimental precursor, a proof of concept for what would eventually become the fully operational Bonnington Distillery. It ran, it filled casks, and then it was quietly dismantled.

Total output, for all time: 39 casks. That is the entire production history of a distillery that briefly ended Edinburgh's century-long whisky drought. The site today is a maturation warehouse surrounded by new apartments. What remains in those 39 casks is the only Chain Pier whisky the world will ever get.

Chapter 2 Gets You Chapter 3

Chapter 3 will be bottled from cask #36 once it is ready. When that day comes, the release will be balloted, which is how almost every genuinely rare single cask is distributed.

Not for Chapter 2 owners. Anyone who buys this bottling is guaranteed a bottle of Chapter 3 when it is released. No ballot. No waiting list. No hoping your name gets pulled. The only way to secure Chapter 3 is to own Chapter 2.

Any customer who buys the Chapter 2 bottling will be offered the Chain Pier Chapter 3 bottling when it is ready, without the need to ballot.

The whisky inside is worth the story around it. The Chain Pier distillate is heavy, meaty, almost savoury, nothing like what people expect from a young Lowland single malt. Five years is young on paper, but this spirit tastes nothing like new make. The first-fill French red wine barrique has done something unusual: added weight and flavor without the usual red wine cask calling cards.

Cask profile, 1st fill French red wine barrique

A red wine cask finish on whisky is usually easy to spot. Jammy fruit, tannin, that distinctive "wine note" that either works or it doesn't. This cask did something different.

The French red wine barrique integrated with the Chain Pier distillate so completely that the wine character does not announce itself. It shows up in the finish as brighter red fruit and a touch of wine, but the main event is the distillate itself: heavy, rich, carrying butterscotch and oak. More like what you would expect from a sweet fortified wine cask than a dry red wine barrique. A genuinely unusual piece of cask influence.

Tasting notes
Nose
Heavy and meaty distillate. Rich and heady. No malt traces of new make remain despite the young age. Heavy black treacle, cinnamon, and sawdust. A touch of lemon creeps in with water.
Palate
Does not taste like any red wine cask whisky I have tried before. Wine influence does not show up until the finish. Rich and full bodied, with the distillate itself as the star. The wood has added considerable flavor, but you could be forgiven for thinking this was a sweet fortified wine cask rather than a dry red wine barrique.
Finish
The heavy spirit slides off the palate leaving butterscotch and oak in its wake. Brighter red fruit emerges. A touch of the red wine finally appears. Stunning.
