THE MANNOCHMORE DUO, PORT VS BOURBON
Mannochmore was built in 1971 outside Elgin to feed the blends: Johnnie Walker, Dimple, Haig. It almost never appears under its own name, which is why two independent single casks landing at The Whiskey Lab in the same season is worth marking. Tri Carragh took a 2014 cask and finished it for 15 months in a 2nd fill Super Tawny Port barrique. Finn Thomson left a 2010 cask alone in first fill bourbon for 16 years and decided it was ready by bothy firelight, snowed in during Storm Dave.
Same spirit, two philosophies. One bottler reached for a finishing cask; the other trusted the barrel it started in. Both are cask strength, non-chill filtered, natural colour. Sold as a set, 10% cheaper than the two bottles on their own.
Bottle one: Tri Carragh Mannochmore 12, 2nd Fill Tawny Port
- Distilled April 15, 2014. Finished 15 months in a 2nd fill ex Super Tawny Porto barrique. Tri Carragh Release 10, 280 bottles.
- 55.6% cask strength, natural colour, non-chill filtered.
- Tri Carragh's notes: ripe strawberries, baked apples and peach nectar with white chocolate, mango and banana. Poached pears and stone fruit wrapped in red berry compote, cinnamon-spiced red wine, dried fruits and cocoa. Lingering red berries, gentle spice and burnt Demerara sugar.
Bottle two: Finn Thomson Mannochmore 2010, 16 Year, 1st Fill Bourbon
- Distilled March 23, 2010, bottled May 19, 2026. Full maturation in first fill bourbon barrel No. 3038. 256 bottles.
- 53.2% cask strength, natural colour, non-chill filtered.
- Finn's notes: fresh orchard fruits, crisp green apples and ripe pears lifted by generous first fill vanilla. Rich, creamy, almost buttery in texture. Warming and complete, lingering creamy vanilla with a final bite of crisp apple.
Why a set
Mannochmore's house style is buttery, fruit-forward and quietly complex, and that shows up in both glasses. What changes is everything around it. The Port barrique pushes the fruit red: strawberry, berry compote, cinnamon. The bourbon barrel keeps it green and gold: apple, pear, vanilla, cream. Four extra years on the Finn Thomson add weight and texture; the Port finish on the Tri Carragh adds colour and spice. Two bottlers, one workhorse distillery, and the clearest side-by-side we can offer of what a finishing cask does versus what time does.
