THE BOWMORE 11 DUO, ONE VARIABLE
This is the experiment whisky people argue about at the bar and rarely get to run. Two casks of Bowmore, distilled four months apart in 2015, both eleven years old, both in ex-bourbon American oak, both at cask strength. One barrel had been used before. One had not. That is the whole difference, and it changes everything.
The refill barrel let the spirit lead: soft Islay peat, ripe orchard fruit, and a savoury finish so distinct Little Brown Dog marked the cask with a sketch of a roast chicken so they would not lose it. The first fill barrel had all its bourbon left to give: honey, vanilla, cereal sweetness laid over the same salty peat. Sold as a set, 10% cheaper than the two bottles on their own.
Bottle one: Little Brown Dog Bowmore 11, Refill Bourbon
- Distilled February 23, 2015, bottled May 5, 2026. One refill bourbon barrel that stood so far apart from the parcel it got its own bottling.
- 58.3% cask strength, natural colour, non-chill filtered. 272 bottles.
- LBD's notes: nectarine, smouldering birch, buttered toast. Tinned peaches, miso, honeycomb. Roast chicken crisps. The label is drawn up like the crisp packet.
Bottle two: Uncharted "One Way Or Another" Bowmore 11, 1st Fill Bourbon
- Distilled June 27, 2015, bottled August 2026. A first fill ex-Jim Beam barrel, cask UC067.
- 54.1% cask strength, natural colour, non-chill filtered. 565 bottles.
- Uncharted's notes: salty peat, sugary breakfast cereal, icing sugar. Bright and salty, sugary sweet before drying out to tingling oak and spice with a generous honey note. Sugar fades to oak and delicate smoke.
Why a set
Every other pair we sell changes the cask type. This one holds the cask type constant and changes only the fill. Pour them side by side and you are tasting what a barrel's first use takes out of the wood, and what a second use leaves for the spirit to say. Peat and fruit in one glass, peat and honey in the other, from stills that ran four months apart.
One set contains one 700ml bottle of each release. The Uncharted arrives on the November 2026 import; sets ship the week it lands.
