Dailuaine is one of Speyside's great hidden engines. Founded by William Mackenzie in 1852 in a hollow beside the River Spey, it grew into one of the region's largest distilleries, and today nearly all of its big, full-bodied spirit disappears into Diageo's blends, Johnnie Walker chief among them. Official single malt bottlings are rare, which makes independent single casks like this one the practical way to actually drink Dailuaine as Dailuaine.
Dram Mor took this weighty Speyside malt and finished it in a first fill Elijah Craig bourbon barrel from Heaven Hill in Kentucky, layering charred-oak vanilla and caramel over a naturally rich spirit. Single cask #300972, bottled at a cask strength of 52.9%, non-chill filtered, natural colour, 289 bottles worldwide. The Whiskey Lab's allocation is 41 bottles. Imported by The Whiskey Lab.
About Dram Mor
Dram Mor (Gaelic for "big dram") is the independent bottler founded in 2019 by husband and wife team Kenny and Viktorija Macdonald in Dumbarton, Scotland, where Kenny's grandfather was head foreman at Hiram Walker's Dumbarton distillery. What began as an export agency for Scottish brands became a family of single cask bottlers with one simple rule: choose individual casks that showcase the best of every whisky, and bottle them at cask strength, non-chill filtered, at natural colour. Their casks now reach some 25 countries, Michelin-starred restaurants included. This is Dram Mor's first release with The Whiskey Lab.
Distillery profile, Dailuaine
- Founded in 1852 by William Mackenzie; the name is Gaelic for "the green vale," after its site in a hollow by the Spey near Aberlour.
- Once Speyside's largest and most innovative distillery, it was the first in the region to sport the now-iconic pagoda roof over its malting floors.
- Owned by Diageo, with almost the entire output used as a full-bodied base for blends such as Johnnie Walker. Official single malt releases are few and far between.
- The house style is heavy and muscular for Speyside: Dram Mor's own label describes "a rich and velvety mouthfeel with plenty of dried fruit and chocolate notes."
The cask
Elijah Craig is Heaven Hill's flagship small batch bourbon, named for the Baptist preacher credited in legend with first charring oak barrels. Its barrels are heavily charred new American oak, soaked in Kentucky bourbon before making the trip to Scotland.
As a first fill finishing cask, that barrel still has plenty to give: char-driven vanilla, caramel and toasted oak sweetness that slots naturally into Dailuaine's rich, weighty spirit rather than covering it up.
At 52.9% the result keeps its cask strength texture. One barrel, 289 bottles, and only 41 of them come to the US through The Whiskey Lab.
