WHISPERING WATERS TEANINICH 12 YEAR OLD, 1ST FILL OLOROSO SHERRY BARRIQUE
Teaninich is a name most American drinkers have never seen on a label. One of Diageo's quiet Highland workhorses, it is prized almost entirely for the blends it disappears into and is rarely bottled as a single malt outside Scotland. That obscurity is exactly why it rewards a closer look.
What sets Teaninich apart begins long before the spirit reaches a cask. Fermentation runs a minimum of 75 hours, far beyond the industry norm, building real complexity and depth into the wash. And it is the only malt distillery in Scotland that runs its wort through a mash filter press rather than a traditional mash tun, producing an exceptionally clear wort. The payoff is a clean, floral distillate with notes of fresh-cut Japanese grass and not a hint of acidity.
Then there is the cask. This is a 1st fill Oloroso barrique from a prestigious Spanish bodega, not the industry-seasoned sherry wood that became standard after the 1980s, when most casks began to be built specifically for Scotch and sherry quality was traded for volume. This barrel once held genuine, high-quality sherry, and that difference is one you can taste.
Matured in an ex-bourbon hogshead and finished in that 1st fill Oloroso barrique. Distilled February 2012. Bottled August 2024. Single cask. Cask strength at 56.5%. Non-chill filtered. Natural color. 306 bottles.
Distillery profile, Teaninich
- Founded in 1817 by Hugh Munro on his Teaninich estate near Alness, in the Northern Highlands.
- Now a Diageo distillery, Teaninich is one of Scotland's great unseen workhorses, with most of its spirit destined for blends rather than single malt bottlings.
- Uniquely among Scottish malt distilleries, it uses a mash filter press instead of a mash tun, producing an unusually clear wort, paired with long 75-hour-plus fermentations for a clean, floral spirit.
- At 12 years with an active Oloroso finish, this release lets that delicate Highland character carry real sherry weight without being buried by the cask.
Cask profile, 1st Fill Oloroso Sherry Barrique
A 1st fill Oloroso barrique sourced from a prestigious bodega in Spain, a cask that genuinely matured high-quality sherry before it ever held whisky. Since the 1980s that has become a rarity: most sherry casks are now seasoned to order for the Scotch industry, with the wine treated as a means to an end rather than a product in its own right.
Oloroso is aged oxidatively, which builds nutty, savoury depth, walnut, dried fruit, and warm spice, rather than sticky sweetness. Layered over Teaninich's clean, floral distillate, it brings dried dates, pecan, and brown-sugar richness without ever turning heavy.
A real sherry cask, the way they used to be made.
