Millstone Heavily Peated Dutch Single Malt, Cask No. 2625
A single cask of heavily peated Millstone Dutch single malt, distilled at Zuidam Distillers in Baarle-Nassau on 12 May 2017 and matured in a refill Pedro Ximenez sherry cask, number 2625. It was selected and bottled by Blackadder International at 6 years old and cask strength, 53.6% ABV, with no chill filtration and no added colour. The cask yielded 384 bottles.
Heavily peated spirit from a Dutch family distillery is already an uncommon starting point. Putting it into a refill PX cask, where the sherry influence stays measured rather than dominant, lets the smoke and the distillery's long-fermentation malt character share the frame with the dried-fruit weight of the wine. This is one of a small handful of Millstone single casks Blackadder has released, and one cask is all there is.
About Zuidam Distillers & Millstone
Zuidam Distillers is one of the last fully independent family distilleries in the Netherlands. Fred van Zuidam founded it in 1975 in Baarle-Nassau, on the Belgian border, with a single copper still and 300 square metres of floor space. Today his sons run the company, with Patrick van Zuidam, who started distilling at 14, as master distiller. The house method has not changed to suit volume: grain ground slowly by traditional Dutch windmills, long cool fermentations that run for days rather than hours, and unhurried distillation in small copper stills.
The first experimental whisky casks were filled in 1996, and the Millstone name, a nod to those windmill stones, has since become the benchmark for Dutch whisky. Millstone's 100 Rye was named World's Best Rye at the 2022 World Whiskies Awards and took the category again in 2023, and the distillery's sherry-matured single malts have built a devoted following among collectors of Continental European whisky. Millstone is proof that serious whisky does not have to come from Scotland.

Cask profile
Cask no. 2625 is a refill Pedro Ximenez sherry cask, filled with heavily peated Millstone spirit distilled on 12 May 2017. PX casks are seasoned by one of the sweetest, darkest wines in Jerez, made from sun-dried grapes, and they give whisky richness, colour, and dried-fruit depth.
Because this is a refill cask, the sherry speaks at a lower volume than a first fill would. That restraint matters here: it leaves room for the peat smoke and the distillery's malt character instead of burying them under wine. It is a deliberate pairing, not a coat of paint.
Blackadder International bottled the cask in 2023 at 6 years old, straight from the wood at 53.6% ABV, non-chill filtered and at natural colour. The outturn was 384 bottles for the world. When they are gone, this whisky does not exist anymore.
