Millstone Heavily Peated Dutch Single Malt, Cask No. 2609
A single cask of heavily peated Millstone Dutch single malt, distilled at Zuidam Distillers in Baarle-Nassau on 12 May 2017 and matured in a Pedro Ximenez sherry cask, number 2609. It was selected and bottled by Blackadder International at cask strength, 53.2% ABV, with no chill filtration and no added colour.
Cask 2609 is a sister cask to our No. 2625: the same distillation day, the same heavily peated spirit, the same PX sherry wood, and yet its own whisky, resting at its own strength. Side by side they are a live demonstration of what single cask actually means. On its own, this is a rare thing: peat smoke and PX sherry from a windmill-fed Dutch family distillery, one cask, never to be repeated.
About Zuidam Distillers & Millstone
Zuidam Distillers is one of the last fully independent family distilleries in the Netherlands. Fred van Zuidam founded it in 1975 in Baarle-Nassau, on the Belgian border, with a single copper still and 300 square metres of floor space. Today his sons run the company, with Patrick van Zuidam, who started distilling at 14, as master distiller. The house method has not changed to suit volume: grain ground slowly by traditional Dutch windmills, long cool fermentations that run for days rather than hours, and unhurried distillation in small copper stills.
The first experimental whisky casks were filled in 1996, and the Millstone name, a nod to those windmill stones, has since become the benchmark for Dutch whisky. Millstone's 100 Rye was named World's Best Rye at the 2022 World Whiskies Awards and took the category again in 2023, and the distillery's sherry-matured single malts have built a devoted following among collectors of Continental European whisky. Millstone is proof that serious whisky does not have to come from Scotland.

Cask profile
Cask no. 2609 is a Pedro Ximenez sherry cask, filled with heavily peated Millstone spirit distilled on 12 May 2017. PX casks are seasoned by one of the sweetest, darkest wines in Jerez, made from sun-dried grapes, and they give whisky richness, colour, and dried-fruit depth.
Peated spirit and PX wood is a deliberate pairing of opposites: smoke on one side, concentrated sweetness on the other, with the distillery's long-fermentation malt character holding the middle. Zuidam ferments slowly and distils gently, which gives its peated spirit an unusual amount of fruit to bring to that conversation.
Blackadder International bottled the cask straight from the wood at 53.2% ABV, non-chill filtered and at natural colour. One cask, from a distillery whose single cask releases rarely reach the United States at all.
