Bowmore 2015 · 11 Year Old Single Refill Bourbon Single Malt
The Chicken Cask
One Barrel, Too Good To Blend Away
Pulling cask samples in the warehouse, Little Brown Dog hit one refill bourbon barrel that stood so far apart from the rest of the parcel they marked it with a (very rough) sketch of a roast chicken so they would not lose it. Technically a small batch, since the distillery bulk-vatted the whisky before filling, but it went into the bottle as a single barrel because that character could not be repeated.
There is a little more peat oomph than Bowmore usually gives you, wonderfully fruity up front before turning savoury and umami, with a gorgeous texture. The label leans right into it, drawn up like a roast chicken crisp packet.
272 bottles, at 58.3%.
Distillery profile, Bowmore
- One of Islay's oldest distilleries, founded in 1779 on the shore of Loch Indaal.
- Known for a softer, more elegant Islay smoke and a signature tropical-fruit thread.
- Here the peat pushes a touch harder than the house norm while the fruit stays front and centre.
Cask profile, single refill bourbon
Matured in a single refill bourbon barrel, then bottled on its own rather than vatted back into the parcel.
Refill wood lets the distillate lead — the soft peat, bright fruit and that uncanny savoury finish all come from the spirit, not heavy oak.
