- Founded in 1846 by Hector Henderson, built in a sheltered bay near Port Askaig on Islay’s east coast.
- “Caol Ila” is Gaelic for the Sound of Islay, the strait the distillery overlooks.
- Absorbed into DCL in 1927, now part of Diageo, with much spirit historically destined for major blends (notably Johnnie Walker).
- Rebuilt in the early 1970s and expanded to six stills, making it one of Islay’s largest producers.
Tokaji (Tokaj) is a historic wine tradition from northeastern Hungary, famous for sweet styles like Tokaji Aszú, made from grapes affected by noble rot (botrytis), concentrating sugars and flavours into a honey-like richness.
In whisky finishing, Tokaji casks tend to add a rounded sweetness and ripe stone-fruit character that can play beautifully against coastal smoke and citrus.
