Braeval 9.97 Year
Whispering Waters salutes the Silent Service, the quiet craft of submariners, and Scotland’s sea-lore. In old tales the ceasg (“maid of the wave”) and selkies sometimes bless those who win their favor, granting gifts, safe passage, or notable seafaring descendants. Our mermaid mark nods to that good fortune. Each release is a single cask chosen for quiet depth and clarity. Natural color, non-chill filtered, always cask strength — whiskies that don’t shout, they reveal.
Nose
Dark, jammy fruits intertwine with herbaceous berries. Layers of sherried sweetness rise through, lifted by hints of warm spice and dried fig.
Palate
Silky dark chocolate envelops the taste buds, enriched with stewed blackberries and currants, woven through with honeyed dates and cherry liqueur.
Finish
Woody spices gradually emerge, supported by a backdrop of sherried oak. Subtle hints of chilli and cinnamon linger with lasting warmth.
Why This Cask
Full maturation in 1st fill PX sherry is rare. Nearly ten years soaking in a single Pedro Ximénez cask delivered incredible depth for a sub-10-year whisky. The cask did all the talking — dark fruit, chocolate, and spice without needing decades to get there.
GlenAllachie 10 Year

Our mermaid mark nods to that good fortune. Each release is a single cask chosen for quiet depth and clarity. Nose
Aromas of dried figs, toasted almonds, and dark chocolate intertwine with hints of cinnamon and orange zest.
Palate
A luscious mouthfeel reveals layers of stewed plums, black cherries, and nutmeg, complemented by undertones of espresso and treacle.
Finish
Long and warming, with lingering notes of sherried oak, spice, and a touch of sweet tobacco.
Why This Cask
Full maturation in 1st fill Oloroso sherry. GlenAllachie's new-make spirit carries natural weight and texture — ten years of uninterrupted Oloroso contact gave it exactly the dark fruit intensity and layered depth we look for in a sherried single malt.

Nose
A vibrant burst of fresh fruit and pecans with subtle hints of citrus, setting a fresh and inviting tone.
Palate
Rich and deep, unfolding with a medley of dried fruits, notably sweet dates, intertwined with the caramel-like sweetness of brown sugar.
Finish
Long and pronounced, a gradual crescendo of warm spices revealing lingering complexity that encourages savoring.
Why This Cask
The bourbon hogshead let Teaninich's natural fruity character develop on its own terms, then a finish in a genuine ex-bodega 1st fill Oloroso barrique — a cask that held real sherry for years before we ever saw it — layered in dried fruit and spice without overwhelming the spirit's identity. Ex-bodega wood carries an authenticity and depth that wine-treated casks simply can't replicate. Two casks, one story.

Nose
Opens with rich brown butter and a touch of cinnamon. With water, evolves into brown butter cornbread and coconut oil, with a subtle undercurrent of vanilla.
Palate
Velvety and complex with an oily texture. Flavors of overripe bananas, candied bacon, and a tropical hint of pineapple create a rich, engaging taste experience.
Finish
Long and indulgent, marked by a buttery richness and a delightful fruity funk, leaving a lasting impression of both luxury and depth.
Why This Cask
27 years in ex-bourbon is where single grain becomes something else entirely. The long maturation transformed this into a buttery, tropical, dessert-like dram that most people don't expect from grain whisky. This is the bottle that changes minds about the category.

Nose
Bright zingy fruit, a touch grassy, summer blossom and a little bit of green apple. This is elegant.
Palate
Pineapple upside down cake and lemon sorbet burst out first before gentle spices of nutmeg and cinnamon emerge.
Finish
The fruit tingles on the palate like popping candy — almost effervescent. As it fades, tropical fruit juice and lemon sherbet remain.
Why This Cask
From one of Edinburgh's most underrated distilleries. 35 years in a single hogshead produced an effervescent, bright, tropical character that defies its age. Most whiskies this old lean into oak — this one still dances with fruit.
Invergordon 50 Year

Nose
Fresh pour opens with crisp green apple, bright and garden-clean. A swirl in the tulip shifts it into candied fruit dusted with caramelized sugar, then ripe cherries muddled into a freshly poured Old Fashioned.
Palate
Long and warming. The heat builds slowly, peaking around thirty seconds, with cinnamon spice rising like the first fire of winter. Soft, honeyed, generous.
Finish
Opens with lemon sherbet — bright sweetness that grows, long and warm, into freshly baked gingerbread cookie. Lingers for nearly two minutes with soft echoes of oak and fruit.
Why This Cask
Fifty years in wood is nearly unheard of for a grain whisky. Distilled at Invergordon in 1974, this spent 49 years maturing before a final year in 1st fill ex-bourbon added vanilla brightness. Only 120 bottles worldwide.
Aberlour 11 Year
Whispering Waters salutes the Silent Service, the quiet craft of submariners, and Scotland’s sea-lore. Nose
Sweet and inviting. Fresh fruit settling into baked warmth, fruit-topped butter cookie, undertone of toffee and vanilla.
Palate
Hard fruity candy, bright and concentrated. A Gushers-like burst gives way to velvety sugar-coated dried fruit with building spice.
Finish
Long — well over two minutes. Sweet evolving to warm spice, rich lingering tingle, sherry-kissed vanilla cookies.
Why This Cask
Ximénez-Spínola is one of Spain’s most prestigious sherry houses, and their PX casks deliver an intensity of dried fruit sweetness that generic sherry casks can’t match. Eleven years of Aberlour’s rich Speyside character, elevated by world-class wood.
Invergordon 1986 — 40 Year
Whispering Waters salutes the Silent Service, the quiet craft of submariners, and Scotland’s sea-lore.
Nose
Fig, raisin, dark honey, candied orange peel, soft tropical lift, dried apricot, baking spice.
Palate
Rich dried-fruit forward. Sherry-soaked raisin, fig, dark honey, orchard fruit, candied orange, clove, cinnamon.
Finish
Very long. Dried fruit and dark honey, clove, quiet salinity, bright fruit returns at the end.
Why This Cask
Four decades in wood, then reracked into 2nd fill Oloroso for the final five years. The result is a grain whisky of extraordinary complexity — the long bourbon maturation built tropical depth, and the Oloroso finish layered dark fruit and spice on top. At 47.4%, it’s remarkably drinkable for its age.

Nose
Old polished oak and beeswax open the glass. Dried apricot and orchard fruit develop with air, joined by dark honey and a soft tropical lift. Tobacco leaf, candied orange peel, and a faint waxy lanolin that is the Macduff signature.
Palate
Layered and unhurried. Concentrated mature fruit, walnut oil, and the soft vanilla custard that long bourbon maturation lays down. Mid-palate carries dried fig and a subtle baking spice. The oak is fully present but never aggressive.
Finish
Very long. Warming oak spice fades into honeyed orchard fruit, dried apricot, and a quiet salinity from the coastal warehouse beside the Deveron. Clove and dried fruit linger.
Why This Cask
Forty-five years in a single refill bourbon cask is an extraordinary achievement. The spirit and wood have reached a state of near-perfect equilibrium. Macduff (also known as Glen Deveron) is a coastal Highland distillery whose character rewards patient maturation. This is a once-in-a-lifetime bottling.

Teaspooned Balvenie 1989 — 36 Year
Whispering Waters salutes the Silent Service, the quiet craft of submariners, and Scotland’s sea-lore.
Nose
Preliminary — expect rich sherry sweetness layered over 36 years of Balvenie’s honeyed Speyside character.
Palate
Preliminary — deep PX influence with dried fruit, dark chocolate, and the famous Balvenie honeyed malt.
Finish
Preliminary — exceptionally long with sherry richness and mature oak complexity.
Why This Cask
“Teaspooned” means a tiny amount of another malt was added to a single cask — a legal technicality that prevents the distillery name from being used. The result is effectively a 36-year-old Balvenie in 1st fill PX sherry, one of the most sought-after combinations in whisky. Exceptional value given the age and provenance.

Palate
Super smooth and warming. Fresh baking notes like lemon drizzle cake, accompanied by florals and oak.
Finish
Soft esters, pears, oak wood, mild vanilla, and malted barley.
Why This Cask
The Blue Collection is built differently — a core range where every batch is slightly different. Three ex-bourbon barrels from Aultmore, selected for their bright, grassy, fruit-forward character. Minimal intervention: no colouring, no chill filtration, no finishing casks. Nowhere to hide.

Nose
An unashamed sherry bomb. Oloroso sherry leaps out the glass chased by the cask strength tingle. Deep sticky toffee, Nutella, brown sugar, leather and cigar box.
Palate
Mature at first; new leather, Christmas pudding and vanilla ice cream. A touch of water brings the caramel and toffee chocolate box to life.
Finish
Long tingling spice, chocolate and cinnamon Danish pastries.
Why This Cask
An unapologetic juggernaut. Seven years in 1st fill Oloroso delivered a sherry bomb that tastes exponentially better than many much older whiskies. The cask imparted deep colour and massive flavour — proof that age is just a number when the wood is this active.
Higher Ground

Uncharted seeks out exceptional casks from Scotland’s renowned distilleries, each brimming with untapped potential. Nose
A classic sherry bomb. Bright, fruity distillate sits underneath a thick cover of rich butterscotch and sticky toffee pudding.
Palate
Rich and generous. Sticky dates, cinnamon swirl pastry, melted vanilla ice cream. The kind of palate that rewards a slow sip.
Finish
Gentle and slow to leave. Butterscotch oozes off the palate, revealing oak and the quiet waft of a spice cupboard.
Why This Cask
Scotland’s highest distillery, ten years in first-fill Oloroso. Full maturation in sherry barriques gave this Braeval a rich, generous character — butterscotch and sticky toffee from a distillery better known for light, fruity spirit. The elevation in the cask matched the elevation at the still.
The Chain Chapter 2
Uncharted Whisky Co., an independent bottler nestled amidst the rolling hills of Scotland, invites you to embark on a captivating exploration of the finest single malt Scotch whisky. Uncharted seeks out exceptional casks from Scotland’s renowned distilleries, each brimming with untapped potential. Their curated collection unveils a treasure trove of limited-edition expressions, showcasing the diverse terroirs and distilling traditions that shape Scotland’s liquid gold.
Nose
Heavy and meaty distillate. Rich and heady. Heavy black treacle, cinnamon, and sawdust. A touch of lemon creeps in with water.
Palate
Rich and full bodied, with the distillate itself as the star. The wood has added complexity without overpowering.
Finish
The heavy spirit slides off the palate leaving butterscotch and oak in its wake. Brighter red fruit emerges. A touch of the red wine finally appears. Stunning.
Why This Cask
A 5 year old whisky from a distillery with a 5 year lifespan. Chain Pier produced only 39 casks in its entire existence before being dismantled. This is cask #8 of 39 — once these are gone, they are gone forever. History in a bottle.
Ruby Tuesday
Uncharted Whisky Co., an independent bottler nestled amidst the rolling hills of Scotland, invites you to embark on a captivating exploration of the finest single malt Scotch whisky. Uncharted seeks out exceptional casks from Scotland’s renowned distilleries, each brimming with untapped potential. Their curated collection unveils a treasure trove of limited-edition expressions, showcasing the diverse terroirs and distilling traditions that shape Scotland’s liquid gold.
Nose
Red berries and stewed fruit open first, wrapped in a deep woody spice. A few drops of water pull out fresh grassy notes that lift the whole profile.
Palate
Sweeter and richer than the color suggests. Coats the mouth like syrup. The creamy backbone of Girvan single grain holds its ground underneath the unctuous ruby port character, with European oak pepper and mature leathery chocolate layering on top.
Finish
The bright zing softens into clootie dumpling sweetness, melts back into the creaminess of the single grain, and settles into a clove-infused warmth that does not want to leave.
Why This Cask
A 28 year old whisky inside a 60 year old port butt. The Ruby Port cask had over six decades of solera service before it ever met this Girvan grain — European oak staves saturated with port character. The result is a single grain with the depth and complexity you’d expect from a much more expensive malt.
Park Life 1 — 20 Year

Uncharted seeks out exceptional casks from Scotland’s renowned distilleries, each brimming with untapped potential. Their curated collection unveils a treasure trove of limited-edition expressions, showcasing the diverse terroirs and distilling traditions that shape Scotland’s liquid gold.
Nose
Fragrant bay leaf and fresh lemon zest intertwine with oak and a grounding earthiness.
Palate
Golden syrup, buttery popcorn and warm nutmeg sprawl over the palate, followed by soft florals, heather, and a touch of spice.
Finish
A gentle wisp of smoke lingers, with smooth caramel sweetness and a salty swish.
Why This Cask
Twenty years in a single refill bourbon barrel from an unnamed Highland island distillery — this is the bourbon-matured counterpart to Park Life 2. The ex-bourbon cask preserves the distillery’s coastal character while layering on golden syrup sweetness and a whisper of smoke. At 60 bottles for the US, it won’t last.

Nose
Caramel sweetness with a rare touch of mint and eucalyptus.
Palate
A bold yet balanced profile of herbals, layered with creamy vanilla and super subtle smoke suggestion.
Finish
A smoky-sweet finale that lingers with soft herbal goodness and caramel.
Why This Cask
Twenty-two years in refill sherry gave this Highland malt a profile you rarely see — menthol, eucalyptus, and herbal complexity alongside the expected caramel and vanilla. The refill sherry added nuance without the heavy dried fruit of a first fill. Paired with the 20 Year bourbon cask, these two reveal what the same distillery can become in different wood.
Spey Oddity

Uncharted seeks out exceptional casks from Scotland’s renowned distilleries, each brimming with untapped potential. Their curated collection unveils a treasure trove of limited-edition expressions, showcasing the diverse terroirs and distilling traditions that shape Scotland’s liquid gold.
Nose
Juicy melon and ripe peach lead the way, lifted by delicate rose petals and fresh pear, with a whisper of mezcal smoke.
Palate
Moscatel introduces honey alongside dried fig, the waft of opening a kitchen spice cupboard, and more distinct warming cloves. All mellowing lovely into the earthy mezcal cask.
Finish
A long, opulent finish with gentle smoke, lingering sweetness, and a twist of orange rind. A class act.
Why This Cask
Two finishes that have no business working this well together. Moscatel brought honeyed sweetness and floral lift; mezcal added earthy smoke and agave complexity. The Speyside distillate had the backbone to hold both without losing itself. Adventurous cask selection that paid off.
Golden Years — Caol Ila 14 Year
Uncharted Whisky Co., an independent bottler nestled amidst the rolling hills of Scotland, invites you to embark on a captivating exploration of the finest single malt Scotch whisky.
Nose
The seaside meets barbecued peaches. Big tropical fruits, stone fruit and peat.
Palate
Brioche, ripe stone fruits, peat, touch of salinity, banana.
Finish
Fruit gives way to peat which softens to expose oak and mellow spice.
Why This Cask
Tokaji is Hungary’s legendary dessert wine — the “Wine of Kings, King of Wines.” As a finishing cask for Caol Ila’s peated spirit, it creates an unexpected harmony: tropical sweetness meeting maritime smoke. The Golden Years range is Uncharted’s flagship line, and this lives up to the name.
Whole Lotta Rose — Bunnahabhain 7 Year
Uncharted Whisky Co., an independent bottler nestled amidst the rolling hills of Scotland, invites you to embark on a captivating exploration of the finest single malt Scotch whisky.
Nose
Sweet peat, pavlova, powdered sugar, coastal air.
Palate
BIG peat, malt, pavlova, summer berries, salt.
Finish
Long and lingering. Sweet oak, smoke, berries and meringue.
Why This Cask
Staoisha is Bunnahabhain’s heavily peated spirit — big Islay smoke from a distillery better known for unpeated whisky. The 1st fill red wine barrique adds a berry sweetness and meringue-like quality that transforms the peat into something closer to a smoked dessert than a campfire. A crowd-pleaser.
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. These timeless elements have been at the heart of Scotland’s finest spirits for centuries, transforming through time, skill, and patience into a unique expression with every cask. As a single cask malt brand, Tri Carragh celebrates individuality and quality, offering limited-edition releases that will never be replicated.
Nose
Butterscotch leads, deep and rich, with dates, milk chocolate, malt, and warm pastry rising behind it. A quiet cocoa note runs through all of it.
Palate
Wonderfully buttery in texture. Chocolate, dates, and almonds up front, then gentle waves of vanilla, honey, and figs through the mid-palate. Clove, oak, and a bright flash of lemon curd at the back pull the whole thing into balance.
Finish
Dry and exceptionally long, nearly two full minutes. Lemon curd, clove spice, oak, and honeyed dates carry the finish, with a final hint of leather before it fades.
Why This Cask
Mannochmore is rarely seen as a single malt — most of its output vanishes into Johnnie Walker blends. A deliberate 2nd fill bourbon choice lets the spirit’s buttery, fruit-forward house character come through without the wood dominating. The result is one of the most drinkable cask-strength whiskies in the Tri Carragh range.

Nose
Decadent chocolate ganache blends with the citric sweetness of lemon icing, while floral elements add a delicate, airy quality.
Palate
Neat, the palate reveals light tannins and a peppery spice, balanced with the familiar taste of chocolate orange. With water, the whisky becomes creamier and sweeter, enhancing its rich, indulgent profile.
Finish
A smooth, lingering finish with the perfect balance of sweet and spiced notes, leaving a lasting impression of chocolate and citrus.
Why This Cask
Tamnavulin spent over 11 years in bourbon before being reracked into a 1st fill PX sherry hogshead for a focused nine-month finishing period. The short PX exposure adds rich chocolate and dried fruit without burying the distillery’s naturally soft, approachable character. A textbook example of finishing done with restraint.
Linkwood 13
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. These timeless elements have been at the heart of Scotland’s finest spirits for centuries, transforming through time, skill, and patience into a unique expression with every cask. As a single cask malt brand, Tri Carragh celebrates individuality and quality, offering limited-edition releases that will never be replicated.
Nose
Opens with red berries and dark fruits, followed by vanilla and a creamy note, think vanilla scone with clotted cream and jam.
Palate
Dark redcurrants, figs, dates, nuts, and a subtle tannic grip. With water, vanilla steps forward and a delicate rosewater aroma appears. Reduced, the palate becomes juicier and more tropical.
Finish
Soft caramel syrup.
Why This Cask
Linkwood is one of Speyside’s most underrated distilleries — a floral, elegant spirit that takes well to sherry influence. Reracked into 1st fill PX in March 2023, the cask had time to integrate the dark fruit sweetness without overwhelming Linkwood’s delicate house style. The result is a balanced, fruit-forward dram with genuine depth.

Nose
Vanilla leads, rich and confident. Buttercream, fresh peach, and orange zest open up around it, with fresh-cut grass lifting the fruit and a hint of toffee apple underneath.
Palate
Silky and inviting. Pronounced vanilla up front, then cantaloupe melon dusted with Demerara sugar, warmed by cinnamon and green cardamom. A splash of water pulls it into dessert territory: vanilla icing over sponge cake, vanilla fudge, Caramac, and ice cream drizzled with caramel sauce.
Finish
Medium to long. Fennel, cocoa powder, gentle oak spice, and a whisper of soft leather. Complex without being busy, every note holding its place.
Why This Cask
Inchgower is another workhorse distillery that rarely appears as a single malt — most goes to Bell’s blends. Sixteen years in 1st fill bourbon has drawn out remarkable vanilla richness and fruit complexity. This is a dessert-in-a-glass bourbon maturation that proves what Inchgower can do when given proper cask time and cask quality.
Craigellachie 16
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. These timeless elements have been at the heart of Scotland’s finest spirits for centuries, transforming through time, skill, and patience into a unique expression with every cask. As a single cask malt brand, Tri Carragh celebrates individuality and quality, offering limited-edition releases that will never be replicated.
Nose
Orchard fruits such as apples and pears, with a more concentrated sweetness like syrup from tinned fruit.
Palate
Neat: baked apple turnover, with slightly burnt crystallised sugar on the crust and a prevailing syrup sweetness. With water: more cereal notes develop. Reduced: juicy fruits and sweetness intensify, with peaches joining the mix.
Finish
Tasting notes to be confirmed by the bottler.
Why This Cask
A 16-year Craigellachie at cask strength with only 125 bottles is a rare find. The 2nd fill bourbon lets Craigellachie’s famously meaty, sulfury character shine through, tempered into baked orchard fruit territory by the extended maturation. Reracked in June 2024, giving just enough fresh wood contact to lift the fruit without masking the distillery DNA.

Nose
Floral sweetness — lavender and Parma Violets — layered over sticky barbecue sauce on charcoal-grilled ribs, with a hint of sweet tobacco.
Palate
Chewy and meaty with smoked BBQ flavours, red pepper spice, and cherries emerging late. Water intensifies smoke and sweetness, lifting floral notes alongside hickory-smoked goodness.
Finish
Mouthwatering and enduring — a floral and hickory barbecue interplay that lingers with polished smoky sweetness.
Why This Cask
A 1997 Bowmore from a refill sherry butt is serious Islay pedigree. Twenty-seven years has dialled back the raw peat into something more complex — think smoked meat, dried flowers, and dark fruit rather than campfire. Only 12 bottles allocated to the US out of 144 worldwide. This is Founders Access tier for good reason.
Braes of Glenlivet (Braeval) 30 Year
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. Nose
Toffee apples, vanilla fudge, red apples, strawberries, sugar icing — bursting with sweetness.
Palate
Fruit cake, gentle spices, creamy complexity. With water: ripe fruit, estery, strawberry and icing.
Finish
Absolutely delicious — keeps you reaching for another sip. Sweet fruit and gentle oak.
Why This Cask
Thirty years in a single bourbon barrel from one of Speyside’s hidden gems. Braes of Glenlivet (now Braeval) was founded in 1973 and produces a light, fruity spirit that rewards patient maturation. Three decades of gentle interaction have produced something remarkable — all sweetness and fruit with no bitterness.

Nose
Preliminary — expect red berry fruit layered over Braeval’s light malt character with wine cask spice.
Palate
Preliminary — red wine influence adding depth and berry notes to Speyside sweetness.
Finish
Preliminary — medium-long with red fruit and gentle oak tannin.
Why This Cask
An octave cask (50 litres) amplifies the wood interaction, and seven months in a 2nd fill red wine octave was enough to layer berry fruit and spice onto Braeval’s naturally light spirit. At 62.7% ABV, this is a powerhouse that will open up beautifully with water.
Craigellachie 11 Year
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. Nose
Burnt orange, pink grapefruit, lemongrass, squeezed lemon. With water: cantaloupe, banana, red apples, grapes.
Palate
Strong citric character — grapefruit, singed lemon meringue pie, a sour-bitter-sweet combination that’s uniquely compelling.
Finish
Lingering citrus peel and dry Palo Cortado tannins. A bitterness-sweetness interplay that keeps evolving.
Why This Cask
Palo Cortado is the rarest style of sherry — neither Fino nor Oloroso, but something in between. Only 12 bottles remain worldwide from this release. Craigellachie’s naturally sulfury, meaty distillate has been completely transformed by the sherry cask into a citrus-forward, complex dram.
Glenlossie 10 Year
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. These timeless elements have been at the heart of Scotland’s finest spirits for centuries, transforming through time, skill, and patience into a unique expression with every cask. As a single cask malt brand, Tri Carragh celebrates individuality and quality, offering limited-edition releases that will never be replicated.
Nose
Green apples, icing sugar, Victoria sponge, caramel, marzipan. With water: orchard fruits and berries.
Palate
Apples, pears, cinnamon spice, tingling. With water: nutmeg, sweet and rounded.
Finish
Medium, sweet, fruity, warming spice, clean.
Why This Cask
Glenlossie is one of Speyside’s best-kept secrets — almost entirely used in blends, independent single cask bottlings are a rare find. A 1st fill bourbon barrel lets the distillery’s apple-forward, clean spirit shine through with just the right amount of vanilla and spice.
Inchmurrin 8 Year
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. Nose
Rich, soft, inviting. Zesty and savoury with tropical fruit underneath.
Palate
Full and bold. Tropical fruit and vanilla, deep savoury almost smoky depth, roasted nuts, toasted coconut, spice.
Finish
Super long. Fresh fruit, peppery effervescence, Palo Cortado depth lingers beautifully.
Why This Cask
A TWL Exclusive. Twenty-two months in 2nd fill Palo Cortado has added remarkable depth and complexity to this young Highland malt. The rare Palo Cortado sherry style brings a unique savoury-sweet character that creates something far more complex than the age statement suggests.
Kirkinner 4 Year

Nose
Preliminary — expect vibrant red fruit with wine cask influence and youthful spirit energy.
Palate
Preliminary — red wine and berry sweetness with the octave’s intensified wood character.
Finish
Preliminary — medium with fruit and gentle oak.
Why This Cask
Kirkinner is a young Lowland distillery and this 4-year-old showcases what creative cask management can do with young spirit. Three red wine octaves married together, then finished in Cheval Blanc (one of Bordeaux’s most celebrated estates). Remarkable value at this price point.
Loch Lomond Inchmurrin 12 Year

Nose
Preliminary — expect layered complexity with red wine sweetness and a whisper of residual peat influence from the cask.
Palate
Preliminary — Highland malt character enriched by ex-peated red wine cask interaction.
Finish
Preliminary — medium-long with fruit, smoke echoes, and gentle oak.
Why This Cask
An ex-peated red wine octave is a rare and creative cask choice — the previous contents have left a ghost of peat smoke alongside the red wine character, creating a layered complexity. Just 78 bottles from this single cask.
Lochindaal (Bruichladdich) 16 Year
At Tri Carragh, the name is a tribute to the Gaelic phrase meaning “three pillars,” honoring the essential ingredients of whisky: water, barley, and yeast. These timeless elements have been at the heart of Scotland’s finest spirits for centuries, transforming through time, skill, and patience into a unique expression with every cask. Nose
Sweet smoke, bonfire-on-the-beach, peat and coastal, citrus. With water: chocolate and caramel.
Palate
Sweet peat, tropical fruit, orange and lemon, maltiness, sea salt, smoke. With water: creamier, pepper, cinnamon.
Finish
Long, lingering, smoky and coastal. Keeps unfolding with each return.
Why This Cask
Lochindaal is Bruichladdich’s heavily peated expression at 50 PPM — serious Islay peat with Bruichladdich’s signature elegance. Sixteen years in 1st fill bourbon has integrated the smoke beautifully. Gold Medal winner at the World Whiskies Awards 2026.

Nose
Preliminary — expect port-influenced sweetness with berry fruit and Speyside malt.
Palate
Preliminary — tawny port richness layered over Mannachmore’s clean spirit with dried fruit and spice.
Finish
Preliminary — medium-long with port wine sweetness and gentle oak tannin.
Why This Cask
Mannachmore is a Speyside distillery almost entirely reserved for blending — independent bottlings are genuinely rare. Fifteen months in a 2nd fill Super Tawny Porto barrique has added a layer of port wine richness without overwhelming the distillery character.
Benriach 2013
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Bright stone fruit leads. Apricot and white peach lift out of the glass first, followed by homemade marmalade and honeyed malt.
Palate
Rich and layered. Candied apricot, peach skin, and dried mango arrive with weight, then warm spice kicks in mid-palate.
Finish
Long and spiced. The stone fruit fades to a warm bakery finish — pastry crust and candied citrus, with lingering oak.
Why This Cask
Vin de Constance is one of the world’s great dessert wines, produced in South Africa’s Constantia region since the 18th century. As a finishing cask, it brings an intensity of stone fruit sweetness that’s genuinely different from standard wine or sherry finishes — Napoleon’s drink of choice, now elevating Speyside malt.
Caol Ila 2010
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Coastal smoke meets dark fruit. Seaside bonfire first, then dark cherry, dried fig, and warming raisin.
Palate
Oily and broad. Caol Ila’s trademark smoked lemon and brine arrives first, then the Amarone pushes through with dark fruit richness.
Finish
Long and evolving. Maritime smoke and dried fruit hold through a dry, savoury fade. Graphite and lingering warmth.
Why This Cask
Islay peat meets Italian red wine — an unexpected pairing that works beautifully. The Amarone cask layers dark cherry and fig sweetness onto Caol Ila’s coastal smoke, creating a complex interplay that neither cask type nor distillery character could deliver alone. At 15 years, there’s real maturity here.
Clynelish 2013
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Subtle at first, then expansive. Beeswax and candle wax — the classic Clynelish calling card. Poached pear and honey underneath.
Palate
Weight and grip. That signature waxy texture coats the mouth, carrying honey, orchard fruit, and a faint coastal salinity.
Finish
Long, dry, and persistent. The wax lingers well past a minute, with a quiet fade of honey, salt, and gentle oak.
Why This Cask
Clynelish in a refill hogshead is distillery character in its purest form. No heavy cask influence to hide behind — just that unmistakable waxy texture, coastal minerality, and honeyed fruit that makes Clynelish one of the most respected distilleries among serious whisky drinkers. This is Clynelish as it should be seen.
Glenkinchie 2014
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Bright and aromatic. Fresh cut grass, green apple, and honeycomb up front. A subtle layer of lemon zest and barley.
Palate
Lively and layered. Grassy Lowland freshness meets a creamier mid-palate of vanilla and stewed pear.
Finish
Medium-long, drying toward the end with soft oak tannin and lingering barley. Refined and quietly complex.
Why This Cask
Independent bottlings of Glenkinchie are genuinely rare — Edinburgh’s own distillery rarely lets casks leave the estate. A refill hogshead lets the delicate Lowland character shine through at full cask strength, something you’ll never find in the official range.

Nose
Rich and tropical. Mango, pineapple, and dried papaya lead, with a layer of marzipan and butterscotch.
Palate
Oily and broad. Tropical fruit intensity hits first — mango and candied pineapple — then butterscotch and toffee build.
Finish
Long and buttery. The oily mouthfeel persists, with tropical fruit fading into caramel, toasted coconut, and warm oak.
Why This Cask
Colombian oak is one of the most exciting wood types in whisky right now — bringing tropical fruit and butterscotch notes that neither American nor European oak can match. Strathmill is a distillery that flies under the radar, mostly used in blends, making an independent single cask bottling a real find.
Longmorn 1991
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Opulent and layered. Raisin, date, and fig roll out first, soaked in molasses and dark honey.
Palate
Full-bodied and indulgent. Black cherry, stewed fig, and espresso-laced dark chocolate arrive first, with deep oak complexity.
Finish
Very long and evolving. Dark fruit and oak tannin fade together into a cocoa and walnut finish. Dusty library books and lingering warmth.
Why This Cask
Longmorn is one of Speyside’s great unsung distilleries — a cornerstone of Beneagles blends, but rarely seen as a single cask at this age. Thirty-four years of maturation, finished in Ximénez Spinola PX (one of Spain’s finest sherry houses), delivers a level of complexity that rewards every sip. This is a collector’s dram.
Tartan Army — Glen Garioch 1998
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. The casks Finn bottles today were laid down by his grandfather Michael in the 1980s and 90s — one of Scotland’s largest private family cask collections, kept back when the rest was sold. Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Deeply matured. A gentle wisp of old peat smoke, long integrated, more suggestion than statement. Honeyed oak and dried herbs.
Palate
Oily and complex. The long maturation brings heavy texture, coating the palate with honeyed oak, smoked almond, and dried stone fruit.
Finish
Very long and meditative. Smoke, oak, and savoury richness linger in equal measure. A finish that rewards patience.
Why This Cask
The official whisky of Scotland’s Tartan Army supporters — matured for 28 years, as long as the fans have waited. Glen Garioch is one of the oldest distilleries in Scotland with a gentle peatiness that’s almost entirely integrated after nearly three decades in bourbon. Proceeds support the Tartan Army Children’s Charity.

Now they’re being released, one cask at a time, to a new generation of drinkers.
Nose
Tropical and decadent. Pineapple, mango, and banana lead, drawing comparison to aged Caribbean rum.
Palate
Oily and rich. Rum and raisin ice cream coats the mouth first, then pineapple tarte tatin, vanilla custard.
Finish
Long and creamy. Tropical fruit and vanilla linger well past a minute. Oak emerges late, drying gently.
Why This Cask
Distilled the day Scotland played Brazil in the 1998 World Cup opening ceremony — a date seared into every Scottish football fan’s memory. Twenty-eight years in bourbon barrel transformed this grain whisky into something closer to aged rum than typical Scotch. Proceeds support the Tartan Army Children’s Charity.
Tartan Army — Tamnavulin 12 Year
Finn Thomson is the ninth generation of a Perthshire whisky family whose roots run from illicit stills on the banks of the Tay to the Golden Beneagles blend that poured through Gleneagles in the 1920s. Nose
Soft and grainy. Toasted cereal, honeycomb, and brown sugar arrive first. Light vanilla and gentle oak.
Palate
Smooth and cereal-forward. Sweet malted barley, toasted Golden Grahams, and honey drizzle on toast.
Finish
Medium length. A gentle fade of sweet cereal and light oak, with the honey-malt character lingering.
Why This Cask
The Tartan Army Tier 3 — a whisky for all fans to buy and enjoy. This 4-cask small batch from Tamnavulin is approachable at 40% ABV but retains natural colour and is non-chill filtered. An affordable entry point that still holds to the quality principles.

North Star Spirits is an independent whisky bottler operating from just outside of Glasgow with a small team that includes family and friends. Founded in 2016 by Iain Croucher, North Star has built a reputation for unearthing hidden gems in the Scotch whisky world — single casks that ignite intriguing discussions, often from distilleries you’ve never heard of, finished in casks you’d never expect.
Nose
Sweeter, spicy phenolic and wood-rich. Raisin-oak, soft vanillas, syrupy gingers, soft plum and a little light French mustard.
Palate
Caol Ila peat, ginger, oakwood, soft liquorice, with hints of absinthe. Water brings out saltiness, some tar and chimney-peat, with mint and sage.
Finish
Medium-long. The peat and spice fade into warm oak and lingering salinity, with herbal notes persisting.
Why This Cask
Five casks hand-selected by Ralfy Mitchell — whisky’s most trusted independent voice — celebrating 10 years of North Star Spirits. Blended at the Bothy, with components spanning Islay peat to Campbeltown salt to Speyside sweetness. All proceeds go to Macmillan Cancer Support.

Founded in 2016 by Iain Croucher, North Star has built a reputation for unearthing hidden gems in the Scotch whisky world — single casks that ignite intriguing discussions, often from distilleries you’ve never heard of, finished in casks you’d never expect.
Nose
Maritime smoke right off the bat. Not overwhelming — like sitting next to a warm fire. The sherry is there too, candied dark fruit laced through bonfire smoke.
Palate
Bonfire smoke but not heavy peat — that classic light smokiness a peated Highland carries, sweet by contrast to Islay. Reads like a smoked Old Fashioned. The 59.5% ABV shows up as intensity, not alcohol.
Finish
All flavours still present at the two-minute mark, tapering slowly. Sweet, smoky, fantastic. A perkiness persists on tongue and lips long after.
Why This Cask
A USA exclusive from one of Scotland’s most talked-about young distilleries. Ardnamurchan produces peated Highland spirit on the remote western peninsula — this 1st fill sherry butt has amplified the distillery’s coastal smoke with dark fruit richness. Just 60 bottles, hand-selected by The Whiskey Lab.
O&C — Miltonduff 13 Year

Founded in 2016 by Iain Croucher, North Star has built a reputation for unearthing hidden gems in the Scotch whisky world — single casks that ignite intriguing discussions, often from distilleries you’ve never heard of, finished in casks you’d never expect.
Nose
Pleasant sweetness of light fruit and sugar. No alcohol scent at all despite the 55.6% ABV. Classic rich and dark fruit a PX cask typically gives.
Palate
Arrives silky and syrupy, coating the tongue with dark-fruit sweetness before the octave’s spice takes over. Black raisin, prune, espresso, and dark chocolate.
Finish
Long and layered. Sweet fruit fades first, then oak tannin and dark chocolate take over, finishing with a warm, spicy tingle that sits on the palate for two minutes.
Why This Cask
A USA exclusive hand-picked from a flight of octaves. The 50-litre PX sherry cask has accelerated the spirit-wood interaction, delivering intensity that a standard barrel would need decades to achieve. Miltonduff is a workhorse Speyside distillery rarely seen as a single cask — this one proves why it deserves the spotlight.
GlenAllachie 10 Year
Glaschu Spirits Co is an independent bottler headquartered in Glasgow, Scotland, founded in 2022 by former aircraft engineers Paul Jamieson and Julian Mithoff. Their label is distinguished by inventive single cask releases with bold and playful finishes — such as tonic wine, Amarone, or PX — and designs that pay homage to Scottish engineering feats through cleverly hidden easter eggs on each bottle label.
Nose
Sticky toffee, dark raisin, cherry preserve, polished oak.
Palate
Chocolate fudge, flame raisins, treacle, orange oil, warm baking spice.
Finish
Long and coating with cocoa, date syrup, and gentle oak tannin.
Why This Cask
Full-life maturation in a 1st fill PX sherry hogshead from GlenAllachie — a distillery where independent single cask bottlings have become extremely limited since Billy Walker took over operations. The sherry influence is deep but balanced, delivering rich dark fruit and chocolate without overwhelming the distillery character.
Strathdearn (Tomatin) 10 Year
Glaschu Spirits Co is an independent bottler headquartered in Glasgow, Scotland, founded in 2022 by former aircraft engineers Paul Jamieson and Julian Mithoff. Their label is distinguished by inventive single cask releases with bold and playful finishes — such as tonic wine, Amarone, or PX — and designs that pay homage to Scottish engineering feats through cleverly hidden easter eggs on each bottle label.
Nose
Amaretto and cinnamon sugar rise first, followed by dried apricot, baked apple, pear, and a touch of orange oil over honeyed malt.
Palate
Apricot compote and orchard fruit lead. Caramel popcorn and warm custard build mid-palate, with gentle cinnamon and toasted oak.
Finish
Long and richly sticky, carrying apricot jam, almond cream, vanilla custard, and a soft oak spice that lingers.
Why This Cask
Strathdearn is Tomatin’s wholesale cask trading name. Nine years in refill bourbon let the distillery’s light, fruity spirit develop, then a year in 1st fill Madeira added layers of stone fruit and warm spice without burying the malt. A textbook finish cask execution.
Secret Speyside 12 Year
Ferg & Harris is a curator of exceptional luxury whisky experiences, seeking out the most remarkable single malt & single cask whiskies, and elevates them to new heights through meticulous cask finishing. Each bottle is a testament to unwavering pursuit of quality, a symphony of flavor that embodies the artistry and tradition of Scotch whisky.
Nose
Scents of toffee, baked figs, rich raisins at the start with lighter fruity notes follow.
Palate
A quick hit of sherry sweetness on the palate that coats the mouth and throat. Robust sweetness and subtle woody notes gifted by the barrel.
Finish
Finishes in warm and smooth fashion. The half year in a first-fill PX sherry hogshead adds great depth, with stewed raisins among its simmering fruits.
Why This Cask
The identity of this Speyside distillery remains a closely guarded secret — but the liquid speaks for itself. Six months in a 1st fill PX hogshead was enough to layer rich sherry sweetness onto a well-matured 12-year-old spirit, delivering remarkable value for the depth of flavour.
