Masterfully Finished: 

Peallach (’pyal-akh’) is a pseudonym name for Ledaig, the heavily peated spirit produced at Tobermory Distillery on the Isle of Mull. Established back in 1798, Tobermory Distillery is one of Scotland’s oldest, embracing the windswept wilds and maritime air of the Scottish Inner Hebrides.

The artwork on this release shows a Boeing Stearman bi-plane approaching the bay of Tobermory, on the Isle of Mull. A similar aircraft resides at the Island’s only airfield, Glenforsa. Tobermory is famous for its row of colourful houses, visible in the artwork, along with the distillery at the left hand side of the bay.

Distinctive Features of Distillation:

• Tobermory Distillery on the Isle of Mull is one of Scotland’s oldest active sites and is known for a coastal style that balances orchard fruit with gentle maritime character. The house makes both the unpeated Tobermory spirit and the peated style released as Ledaig, which gives blenders and bottlers a wide palette for single cask selection.
• Exceptional Cask Influence:  Finished for 8 months in a 1st Fill Ximénez Spínola Oloroso casks that bring concentrated sherry depth without heaviness. Expect layers of raisin and sultana, walnut and polished oak, dark toffee and orange oil, all knitting into the malt’s island fruit and subtle coastal spice.

Tasting Notes:

Nose

Smouldering maple wood with hints of brûléed figs and cherry liqueur, lifted by a faint coastal breeze that recalls a quiet beach walk.

Palate

Dark chocolate and sticky toffee pudding lead the way, followed by candied orange, spiced plum, and a gentle wave of sweet peat smoke that ties everything together.

Finish

Long, smouldering, and indulgent, fading into honeyed dates and lingering warmth.
