Ximénez-Spínola is a small, iconoclastic bodega in Jerez that has never been bound by convention. We believe this cask held a dry, Oloroso-style sherry made entirely from PX grapes. No sun-drying. No residual sweetness. The PX grapes were fermented dry like a fino or Oloroso, then aged under oxidative conditions.
