At 16 years old, this cask is a lovely example of what happens when you leave a good Speyside spirit in a first-fill bourbon barrel and simply let time do the work. The cask has given it plenty of vanilla and a rich, creamy, almost buttery texture, while the distillery character still shines through with fresh orchard fruits, crisp apples and ripe pears.\u003c\/p\u003e\n\u003cp\u003eI actually decided this cask was ready to bottle in one of the most remote places in Scotland. I was on a trip to \u003cstrong\u003eBen Alder Cottage\u003c\/strong\u003e in April with my Czech importer, Lukas Soucek, when Storm Dave rolled in. What was meant to be an early spring night in the hills turned into being snowed in, huddled around the bothy fire while the wind battered the walls outside.\u003c\/p\u003e\n\u003cp\u003eFortunately, I'd brought a cask sample with me. At full cask strength, it was exactly what was needed after a day in the snow. Sitting by the fire, tasting it in that setting, everything just seemed to click.
