For avoidance of doubt and confusion, there is a distillery that has named itself as ‘The Speyside Distillery’…. it is a little confusing if you’ve not come across it before and many people confuse this with the many ‘un-named Speyside bottlings seen in the whisky world.\u003c\/p\u003e\n\u003cp\u003eTwo sister casks- one first fill oloroso sherry and one bourbon hogshead- have come together to create this classic combo.\u003c\/p\u003e\n\u003cp\u003eThe Speyside Distillery is a stunning picturesque distillery nestled in the hills behind Kingussie near Aviemore. Only a small amount of this spirit was produced and sadly production there has come to an end- the distillery and team are moving to a new distillery location. This distillery has historically crafted a couple of different spirits but this is their headliner- un-peated, fruity, and uber elegant.\u003c\/p\u003e\n\u003cp\u003eThe vatting of the two single casks has created something really delicious. The character of the ex-bourbon maturation is still there while the generous sherry adds layers of toffee and complexity without overpowering the distillery character. The casks have come together to make something much greater than the sum of their parts.Something we love about this is that the ex-bourbon cask, and it’s influence on the vatting has been exceptional- it’s not all about the sherry! There will be only 6 bottles of this for the USA market.\u003c\/p\u003e\n\u003ch2\u003eA BRIEF HISTORY OF BRUICHLADDICH\u003c\/h2\u003e\n\u003cp\u003eBruIchladdich was built in 1881 by family of three Brothers of the Harvey family. Over the years it was bought and sold many times. At the time this cask was distilled and filled, the distillery was under the stewardship of Whyte and MacKay. This distillate is un-peated unlike many other Islay whiskies. Whyte and Mackay would go on to close the distillery in 1994. It lay dormant before being bought again in 2000 by a group of private investors who re-established the brand using old stocks created pre-1994 closure and restarted production of new spirit. With this came a step change in Bruichladdich, many new spirits were created from different barley strains and at peat levels in a new experimental style using themes borrowed from the wine world. This has proved enormously popular among whisky lovers- so much so that the private investors would go on to sell the distillery again to the current owners- Remy Cointreau- for £58 million. So this cask is one of a ever-dwindling stock pile of pre-re-opening stocks. The old style from another Time.\u003c\/p\u003e\n\u003ch2\u003eWHAT’S IN A NAME?\u003c\/h2\u003e\n\u003cp\u003eTime is a recurring theme with this hogshead. It’s old, really quite old, 33 years and 4\u0026amp;nbsp;months old at the time of writing. The distillery and the style it creates has moved with the times too creating different and more industry challenging spirits\u0026amp;gt;This old style harks from previous owners with different intentions for the spirit created. The cask is also almost out-of-time. As whisky ages, the ABV drops year by year and if it drops below 40% abv, it can no longer be bottled as Scotch Whisky. With the natural cask strength down to 46.7% , the time is now for Uncharted to bottle this spirit.\u003c\/p\u003e\n\u003ch2\u003eAN INSIGHT TO OUR INDY BOTTLING STYLE\u003c\/h2\u003e\n\u003cp\u003eWhen we bottle at natural cask strength, the ABV can change slightly between the last time we measure it and it actually being bottled. This was last measured at 46.7% ABV, by the time October rolls around, we expect this to drop slightly- it’s the nature of real minimal intervention whisky. We expect 180 bottles from the cask with 36 of them remaining in the UK. As always…. Un-chill filtered. The cask strength was reading in the high sixties! However, when we tasted it, we realized that there was no mistake- it was full bodied, full flavored and absolutely wild- a definite Bat Out Of Hell. We tasted it at lots of different strengths- it’s natural 69.0% was too high to be enjoyed by most people. So we set about balancing drinkability while maintaining a kicking abv strength.
